Helpful Hints 1007 for Easy Cooking

50 years ago, my sister-in-law, Vangie Wright-Rorke, taught me this trick to freshen and crisp up bread and rolls.

To freshen hardened, unsliced breads, preheat oven to 350 degrees. Place bread in paper bag; fold open end over to enclose completely. Sprinkle or spritz with water on all sides. Place on oven rack and heat until bread is soft and warm, 5 to 10 minutes.

Put onion poultice over a boil to bring it to a head, or use salt meat as a poultice.

Mustard Bath: fill the tub with warm water & mix in a jar of yellow mustard. soak for 15 mins. great for itchy skin.

A good substitute for Prosciutto (Italian ham) is bacon. It provides a very similar flavor, especially for sauces.

When you manage your time you become more effective. Save just 30 minutes every day and you will have saved 182 hours a year or almost 23 8-hour days. Imagine what you can do with 23 eight hour days. It's like getting a free vacation!

When icing a cake on a plate, first put down pieces of wax paper around the plate. When you finish icing the cake pull out the pieces of wax paper, and the plate will be clean.

Need condensed milk and have none at hand? Here is how to make it. Combine one half cup water with three fourths cup white granulated sugar. Heat to bubble stage. [Do not boil]. Remove from heat and add one cup plus two Tablespoons dry milk powder. Stir until smooth. Mixture will be thin, but will thicken after 48 hours.

When you run out of brown sugar in the middle of making something, here is the solution to making brown sugar. Make in a ratio of two cups white granulated sugar mixed with two Tablespoons of molasses. Measure the amount of brown sugar for a recipe; add the molasses to the sugar as needed.

Want to take salt out of your diet, but not flavor? Turn to herbs.

Allspice: for lean ground meats, stews, tomatoes, peaches, applesauce, cranberry sauce, gravies.

Basil: for fish, lamb, lean ground meats, stews, salads, soups, sauces, fish cocktails.

Bay leaves: for lean meats, stews, poultry, soups, tomatoes.

Chives: for salads, sauces, soups, lean meat dishes, vegetables.

Apple cider vinegar: for salads, vegetables, sauces.

Dill: for fish sauces, soups, tomatoes, cabbage, carrots, cauliflower, green beans, cucumbers, potatoes, salads, macaroni, lean beef, lamb, chicken, fish.

Garlic: [not garlic salt] for lean meats, fish, soups, salads, vegetables, tomatoes, potatoes.

Onion: [not onion salt] for lean meats, stews, vegetables, salads, soups.

Paprika: for lean meats, fish, soups, salads, sauces, vegetables.

Lemon juice: for lean meats, fish, poultry, salads, vegetables. The difference is delightfully delicious!
