Chive & Cheddar Cheese Biscuits

3 cups flour

1 tablespoon sugar

4 1/2 teaspoons baking powder

3/4 teaspoon cream of tartar

3/4 teaspoon salt

3/4 cup cold buttermilk, plus more for brushing on top

1 egg

3/4 cup cheddar cheese or a mix other sharp cheeses, cut into small cubes

3 tablespoons Home Farm Herbery Dried Chives

1 and 1/2 stick unsalted butter, cut into cubes


1 diced jalapeno

Sea salt for topping 

1. Preheat oven to 425 degrees F.

2. In a large bowl, combine the first five ingredients.

3. In another bowl, whisk together the egg and buttermilk with a fork.

4. In another bowl, combine the cheese and chives.

5. Cut the butter into the flour mixture until it resembles coarse corn meal. You can do this with a food processor, a pastry cutter, or with your fingers.

6. Toss the cheese and chives with the butter-flour mixture. Make a well in the mixture and slowly add in the buttermilk mixture. Mix with the fork until just combined, everything should be moist and clumpy. The dough will be extremely loose.

7. On a floured surface, turn out the dough and knead until just combined. Form into a rough circle, about 1 or 1 and 1/2 inch thick. Cut into circles with a biscuit cutter or a small clean juice glass. Keep reforming the dough to make biscuit rounds until it is all used. 

8. Place the dough rounds on two parchment lined baking sheets, brush with bit of buttermilk and sprinkle with optional sea salt. Bake for 10-15 minutes or until barely browned on top. You will smell the cheese crisping, be sure not to over bake.  Enjoy them hot with lots and lots of butter!
